We're excited to feature another coffee from famed producer Linarco Rodriguez and his farm Finca Betania. This white honey processed geisha is super clean and fruity, a wonderful example of straight-forward processing. We really enjoy this coffee's apricot and peach fruit leather flavors, along with subtle hints of strawberry and jasmine.
Linarco, a former Cup of Excellence winner, has five farms, with this lot coming from his Finca Betania. Ripe cherries were picked and then floated to remove impurities. After immediate depulping, the coffee sat for 48-hours of aerobic oxidation (not fermentation!). Then it was rinsed, leaving a bit of the mucilage intact during drying — the white honey process. Finally, the coffee dried on raised beds for 12 days and then was expertly milled by our friends at Desarrolladores de Cafe.
Both Linarco's mother and sisters are involved in the operation, which all started with his grandparents. Finca Betania is 42 hectares, five of which are conserved as native forest.
